Banquet Cook

LOCATION: Brown’s Revoluton Hall, Troy, NY

Brown’s Brewing Company is seeking a Banquet Cook to join our Revolution Hall banquet kitchen. In addition to our busy Troy Taproom lunch, dinner, and bar service, Revolution Hall is a premier venue for weddings, private parties, and corporate events. We’re looking for someone who is highly organized, calm under pressure, and skilled in the culinary arts, with a team-focused attitude and excellent interpersonal skills.

Under the guidance of Executive Chef Nigel Peters, the Banquet Cook will play a key role in the success of Brown’s Revolution Hall Banquet and Events team—delivering a top-notch dining experience for every guest.

What You’ll Do

  • Prepare soups, sauces, and menu items, developing and refining dishes as needed.

  • Work closely with the Executive Chef and kitchen team, assisting with line cooking, food prep, and plating.

  • Organize and maintain daily menu ingredients and kitchen stock.

  • Assist with inventory management, food purchasing, and ingredient organization.

  • Oversee and lead kitchen operations in the Executive Chef’s absence.

  • Support a culture of superior service by maintaining strong communication with Revolution Hall front-of-house event staff.

  • Additionally, you will:

    • Maintain or exceed all state, federal, and industry food safety and sanitation standards.

    • Practice proper product rotation and storage procedures.

    • Support banquet and special functions, which may require work beyond regular hours.

    • Perform other duties as assigned.

What It Takes

  • Technical degree or equivalent work experience.

  • Minimum 2 years of related culinary experience.

  • Ability to obtain ServSafe and TIPS certifications.

  • Farm-to-table experience preferred.

  • Strong knowledge of sauté, broiler, sanitation, and all aspects of food preparation.

  • Experience with banquet-style service and preparation.

  • Availability for nights, weekends, and holidays, with flexibility for additional hours during events.
