Spectacular Superbowl Steak Munchies

February - IPA Flank Steak Quesadilla

With the 2011 Superbowl almost here, it's time to get tasty game day beverages and munchies together. Lucky for you, we've got both covered. If you're not watching the game here at Brown's, fill your growler or grab a Variety Pack and a few 22's.Astound your friends with this tender and juicy steak marinade wrapped in the perfect Superbowl snack package - Quesadillas. Steeler and Packer fans will unite for a moment in shock and awe of this fantastic food. Note: The steak should marinate overnight
Ingredients
- 2 lbs flank steak trimmed and cut into 8oz portions.
- 1 white onion
- 1 red pepper
- 1 yellow pepper
- 1/2 can of chipotle in adobe sauce
- Four 10 inch flour tortillas
- 16oz shredded cheddar Jack cheese
- 4oz of Brown's Brewing Co. IPA
- 4oz of white vinegar
- 4oz of olive oil
- 2oz hot sauce
- Chili powder
- Cumin
- Fresh Cilantro
- 1 Lime
Preparations
- Cut peppers, onion, and chipotle into strips. Saute peppers and onion with a little bit of olive oil
- In a bowl add the Browns IPA, 2oz of your favorite hot sauce, and 4oz of white vinegar. Whisk in 4oz of olive oil. Add a dash of chili powder and cumin, 2oz of chopped fresh cilantro, and salt and pepper to taste. Add your flank steak let sit over night
- Sear your flank steak in a large, hot skillet pan to the temperature of your liking.
- In another large skillet place a tortilla, cheese, pepper and onion mix. Cut steak into strips and place into the tortilla. When cheese is melted fold in half and cut three times to make four triangles.
- Serve with sour cream and your favorite salsa
- Recipe makes four servings
